Why does the concept of “All you can eat” seem to work?

It seems to take more and more footage over here and for the life of me, I don’t understand why. Yesterday we went to a restaurant that was recommended to us, just to find out that they had changed their concept. Instead of Sushi and warm meals of the menu, you could only order “all inclusive” “all you can eat” for a “flat rate” of 16.95 €.
It is not about the money, no question, although not rich by any means, I am willing to pay that much and more for a meal that was prepared with good produce and a good sense for flavor.
At least when it comes down to food I rather go out less often and have a normal portion of very good quality than an overabundance of mediocre. In the end for more or less the same price anyway. Is is fun to people to overeat to get their moneys worth?
How do you see that and how is it in your countries?

It works because people are greedy. I visit those places in the UK but not often as like you I would rather have a smaller a smaller portion of good quality food.

I am not a fan of "All You Can Eat" restaurants. I really don't like the idea of eating more than you can actually take just to get your money's worth; it's not right. However, all-you-can-eat places here in the Philippines are such a hit as well. I guess people think it's cheaper than paying by-the-meal.

It's an American thing. I think it caught on here because people like to feel like they're getting a lot of value for their money. Unfortunately it ended up working just a little too well. Many of my fellow Americans are becoming larger and larger...

There are lots of places here in the UK like that. I have been to a chinese buffet all you can eat once...and it was really nice. But the amount of waste people left on their plates was horrendous!
Piling their plates as high as they could with different dishes that certainly do't go very well together.

I have an all I can eat kitchen, so why would I want to eat out?
